The cornerstone of the cuisine is the custom built Parilla grill, with the Brasero (fire box) designed to burn natural timbers, infusing each grilled dish with unique and distinctive flavours. Executive Chef Arnolfo Raimondi was inspired to create this custom grill due to his love of cooking on an open fire, and has successfully replicated the same experience for diners.
