Chef Clayton Wells’ first solo restaurant, Automata, is now open at Kensington Street’s The Old Clare Hotel. The sixty-seat restaurant offers a seasonal five-course menu focusing on unique ingredients delivered in a titillating contemporary fashion with minimal fuss.
The warehouse-style building boasts six-metre high ceilings, long communal tables and original floor to ceiling windows, and features a separate mezzanine dining area. Wells has assembled some of Sydney’s brightest and most experienced talent as his front-of-house, including restaurant manager Abby Meinke, formerly of Moon Park, Claude’s, Bentley Restaurant + Bar and New York’s WD50. Tim Watkins, formerly of Pilu at Freshwater and occasional Ester and Monopole sommelier, has curated a beverage list with a focus on European and Australian aperitifs and wines, many of which are made with minimal intervention.
