Dripping with moss and sumptuous flora, this botanical take-over signals the eagerly anticipated arrival of The Stoneleigh Hotel, a wonder of nature located in the heart of Sydney.

Couldn't make it down to Mekong this time around? Channel Mekong's Chef Tiw Rakarin's zest for cuisine from the comfort of your own kitchen.

Chef Tiw, formerly of Mama's Buoi and Alphabet St, draws on his childhood memories and the rich cultural traditions of the Indochine region to allow diners to dally in every region that the River intersects. Try your hand at Chef Tiw's Seafood Amok

Seafood Amok

Ingredients:

150g Barramundi fillet
2 fresh King prawns
2 fresh scallops
4 pipis
3 tbsp white wine
1 tbsp butter

Sauce:

¼ cup cream
½ tbsp curry powder
½ tsp Chinese wine
1 ½ pork broth
1 tsp white sugar
1 tbsp oyster sauce
½ tbsp soy sauce
1 tsp white pepper
1 egg

Method:

Heat oil in a pan on medium heat. Place all seafood in pan and cook for 3 minutes.
Add white wine and butter and keep cooking in pan for another 3 minutes, or until half-cooked.
Mix all sauce ingredients in a small bowl, and set aside.
Place wok on low heat. Add sauce, followed by seafood. Cook for 1 minute on low, then increase to high heat for 2 minutes.
Add egg and stir until cooked.
Serve.

"This place just gets gets better each time. Asian flavours of chilli, coriander, garlic and lemon grass in and with wonderful sauces and colours. Dumplings are reinvented here. How can they be so clever? So much excitement in the menus with specials as well. Lower Mekong downstairs is for estuarine foods. Where we dined tonight. Upper Mekong with food from the tributaries is appropriately upstairs. Where I dined last week. Delightful."
